Selected and Processed Pistachio with Respect

We work with respect the main ingredient of this pesto. The pistachios are selected from the finest cultivations along the Mediterranean coasts. We have chosen a grinding method that avoids fiberizing the seed while preserving its aromatic oils.

 

 

Energies and Vitamins in Pistachios

Despite being considered a dried fruit, pistachios are actually the seed of the Pistacia Vera fruit. It is a food with extraordinary nutritional properties: rich in vitamin B6, potassium, and iron, it has a high energy content and helps control cholesterol levels.

 Try it also with Zucchini

 Ingredients for 2 people: 

 

250 grams of pasta, 

1/2 zucchini, 

50 grams of stracchino or spreadable cheese 

1 jar of 180 grams  Pistachio pesto 

20 grams of chopped pistachios, 

40 grams of Parmesan cheese;

olive oil to taste

 

1 Cut the zucchini into cubes and sauté them in a pan with a drizzle of olive oil.

 

2 Bring a large pot of water to a boil, add salt, and cook the pasta.

 

3 As soon as the zucchini are slightly golden, blend them with the stracchino, Parmesan cheese, and a ladle of pasta cooking water.

 

4 Drain the pasta, sauté it in the pan with the pistachio "pesto" and zucchini cream, and if necessary, add more cooking water to make it even creamier. Then add a handful of chopped pistachios and... hurry to the table because it's ready!
